Carrot Cupcake Success!

These were absolutely delicious!  The cream cheese frosting is amazing, and the final product is moist and fluffy.  You can’t ask for a better cupcake!

Shredding the carrots takes some work, and the measure of confectioner’s sugar seems on the high side, but when you put some muscle into mixing the frosting, it comes out perfect.  And don’t skimp out on the apple sauce.  The whole combination is incredible.  Completely worth it!
